Entrees
- 1
Preparing the Roast
Start by letting the prime rib roast come to room temperature for about 1 hour before cooking. This ensures even cooking.
- 2
Seasoning the Meat
In a small bowl, mix together the kosher salt, black pepper, garlic powder, onion powder, fresh rosemary, and fresh thyme. Rub the olive oil over the prime rib roast, then generously coat the roast with the seasoning mixture, ensuring it covers all sides.
- 3
Preheating the Oven
Preheat your oven to 450°F (232°C). This high temperature will help create a nice crust on the roast.
- 4
Roasting the Prime Rib
Place the seasoned prime rib in a roasting pan, bone side down. Roast in the preheated oven for 20 minutes to create a crust. After 20 minutes, reduce the oven temperature to 325°F (163°C) and continue to roast until the internal temperature reaches 130°F (54°C) for medium-rare, about 1.5 to 2 hours, depending on the size and shape of the roast.
- 5
Resting the Meat
Once the prime rib reaches your desired internal temperature, remove it from the oven and tent it loosely with aluminum foil. Let it rest for at least 20 minutes to allow the juices to redistribute.

Slicing and Serving
After resting, slice the prime rib against the grain into desired thickness. Serve with the au jus on the side for dipping.
