Shred the cooked brisket into small pieces and place in a mixing bowl.

Finely chop the onion and mince the garlic cloves.

Add the chopped onion, minced garlic, smoked paprika, cumin, salt, and black pepper to the bowl with brisket. Mix well to combine all ingredients.

Heat the Tortillas
In a large skillet, heat 1 tablespoon of olive oil over medium heat. Place one flour tortilla in the skillet.

Spread a generous amount of the brisket mixture evenly over half of the tortilla. Top with shredded cheese.

Fold the tortilla in half and press down lightly. Cook for about 3-4 minutes or until the bottom is golden brown.

Carefully flip the quesadilla and cook for an additional 3-4 minutes or until the cheese melts and the other side is golden brown.
