Preparation

    Prepare the Steak

    Slice the ribeye steak into thin strips against the grain.

    Prepare the Vegetables

    Thinly slice the onion, bell pepper, and mushrooms.

Cooking

    Sauté Vegetables

    Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add the sliced onions and bell peppers, and sauté for about 5 minutes until they are softened.

    Cook Mushrooms

    Add the sliced mushrooms to the skillet and continue to sauté for an additional 3-4 minutes until they are tender. Season with salt and black pepper.

    Cook Steak

    Push the vegetables to the side of the skillet and add the remaining tablespoon of olive oil. Add the sliced ribeye steak to the skillet and cook for about 4-5 minutes until browned and cooked through.

    Combine Ingredients

    Stir the cooked vegetables back into the skillet with the steak and combine well.

    Melt Cheese

    Place the provolone cheese on top of the meat mixture and cover the skillet with a lid. Allow the cheese to melt for about 2 minutes.

Assembly

    Prepare the Rolls

    Slice the hoagie rolls open without cutting all the way through.

    Fill the Rolls

    Spoon the steak and vegetable mixture into each hoagie roll, ensuring each roll is generously filled.

    Serve

    Serve immediately while hot.
