Preparing the Prime Rib
Start by preheating your oven to 450°F (232°C).

Seasoning the Roast
Pat the prime rib roast dry with paper towels. In a small bowl, mix together the kosher salt, black pepper, garlic powder, onion powder, and dried rosemary. Rub the olive oil over the entire surface of the roast, then generously apply the seasoning mix evenly over the meat.

Roasting the Prime Rib
Place the seasoned roast on a rack in a roasting pan. Insert a meat thermometer into the thickest part of the roast (do not touch the bone). Roast in the preheated oven for 15 minutes to develop a crust.

Reducing the Temperature
After 15 minutes, reduce the oven temperature to 325°F (163°C). Continue roasting until the internal temperature reaches 125°F (52°C) for rare, about 1.5 to 2 hours, or until it reaches your desired doneness.

Resting the Roast
Once the roast is cooked, remove it from the oven and tent it with aluminum foil. Allow it to rest for at least 20 minutes to let the juices redistribute.

Making the Au Jus
While the roast is resting, place the roasting pan on the stovetop over medium heat. Add the beef broth and scrape the bottom of the pan with a wooden spoon to release the drippings. Bring to a simmer and let it reduce for about 5 minutes.

Serving the Prime Rib
Carve the prime rib into thick slices and serve with a drizzle of au jus. Garnish with a sprig of fresh rosemary.
