    Prepare the Steak

    Remove the New York Strip Steak from the refrigerator and let it come to room temperature for about 30 minutes before cooking. This ensures even cooking.

    Season the Steak

    Rub the steak with olive oil on both sides. Then, generously season both sides with kosher salt, black pepper, and garlic powder.

    Preheat the Pan

    Heat a heavy skillet (preferably cast iron) over high heat for about 5 minutes until it is very hot.

    Sear the Steak

    Place the steak in the hot skillet and sear it for about 4-5 minutes without moving it. This forms a nice crust.

    Flip the Steak

    Using tongs, flip the steak to the other side. Add the butter and fresh rosemary to the skillet.

    Baste the Steak

    Tilt the pan slightly and use a spoon to baste the melted butter over the top of the steak for additional flavor. Cook for another 4-5 minutes for medium-rare.

    Check the Temperature

    Use a meat thermometer to check the internal temperature. Aim for 130-135°F for medium-rare.

    Rest the Steak

    Remove the steak from the skillet and let it rest on a cutting board for at least 5 minutes before slicing. This allows the juices to redistribute.

    Slice against the grain and serve with your choice of sides.
