    Preheat the Oven

    Preheat your oven to 400°F (200°C).

    Prepare the Potatoes

    Wash the russet potatoes thoroughly under cold running water. Pat them dry with a paper towel.

    Bake the Potatoes

    Poke a few holes in each potato with a fork and rub them with 2 tablespoons of olive oil. Sprinkle sea salt and black pepper evenly over the potatoes. Place them directly on the oven rack and bake for 45-60 minutes, or until fork-tender.

    Cool and Cut the Potatoes

    Once baked, remove the potatoes from the oven and let them cool for about 10-15 minutes. Cut each potato in half lengthwise and scoop out some of the flesh, leaving about 1/4 inch of potato on the skin.

    Season and Prepare for Baking

    Brush the insides of the potato skins with the remaining 2 tablespoons of olive oil. Sprinkle with additional sea salt and black pepper to taste.

    Add Cheese and Bacon

    Fill each potato skin with a generous amount of shredded cheddar cheese and crumbled bacon.

    Bake the Potato Skins

    Place the filled potato skins back on a baking sheet and return to the oven. Bake for an additional 15-20 minutes, or until the cheese is melted and bubbly.

    Garnish and Serve

    Remove the potato skins from the oven and top with sour cream, sliced green onions, and a sprinkle of paprika. Serve warm.
