Prepare the Marinade
In a mixing bowl, combine honey, soy sauce, lime juice, minced garlic, salt, and black pepper. Whisk until well blended.

Marinate the Chicken
Place the chicken breasts in a large zip-top bag or shallow dish. Pour the marinade over the chicken and let it marinate in the refrigerator for at least 30 minutes, or ideally, 2 hours.

Prepare the Vegetables
While the chicken is marinating, chop the red and green bell peppers into strips and set aside. Drain the pineapple chunks if using canned pineapple.

Cook the Chicken
Heat olive oil in a large skillet over medium-high heat. Remove the chicken from the marinade (reserving the marinade) and add to the skillet. Cook for about 5-7 minutes on each side, or until the chicken is cooked through and reaches an internal temperature of 165°F (75°C).

Add Vegetables and Pineapple
Add the chopped bell peppers and pineapple chunks to the skillet with the chicken. Pour the reserved marinade over the top. Cook for an additional 5-7 minutes, stirring occasionally, until the peppers are tender and the sauce has thickened slightly.

Garnish and Serve
Once cooked, remove from heat and garnish with chopped fresh cilantro. Serve hot over rice or with your choice of side.
