Vegetables and Marinade

Method

Preparation and Grilling

  1. 1

    Prepare the Marinade

In a mixing bowl, combine the olive oil, balsamic vinegar, minced garlic, dried oregano, salt, and black pepper. Whisk together until well blended.

  2. 2

    Prepare the Vegetables

Wash and chop the bell peppers, zucchini, and red onion into bite-sized pieces. Keep the cherry tomatoes whole.

  3. 3

    Marinate the Vegetables

Place the chopped vegetables in a large bowl or resealable plastic bag. Pour the marinade over the vegetables, ensuring they are well coated. Cover and refrigerate for at least 30 minutes, or up to 2 hours for more flavor.

  4. 4

    Prepare Skewers

If using wooden skewers, soak them in water for at least 20 minutes to prevent burning on the grill. This step is optional for metal skewers.

  5. 5

    Assemble the Kabobs

Thread the marinated vegetables onto the skewers, alternating between different types of vegetables for a colorful presentation.

  6. 6

    Preheat the Grill

Preheat your grill to medium-high heat (about 375°F to 400°F).

  7. 7

    Grill the Kabobs

Place the skewers on the grill and cook for about 10-15 minutes, turning occasionally, until the vegetables are tender and have nice grill marks.

  8. 8

    Serve

Remove the kabobs from the grill and let them cool slightly. Serve warm as a side dish or appetizer.
