    Prepare the Potatoes

    Peel the potatoes and cut them into quarters. This helps them cook evenly.

    Boil the Potatoes

    Place the quartered potatoes in a large pot and cover them with cold water. Add 1 tsp of salt. Bring to a boil over medium-high heat, then reduce to a simmer and cook for 15-20 minutes or until the potatoes are tender when pierced with a fork.

    Prepare the Garlic

    While the potatoes are boiling, peel the garlic cloves and set them aside.

    Cook the Garlic

    In a small saucepan, melt 2 tbs of butter over low heat. Add the garlic cloves and gently sauté them for about 5 minutes until fragrant and lightly golden. Remove from heat and set aside.

    Drain the Potatoes

    Once the potatoes are done, drain them in a colander and return them to the pot.

    Mash the Potatoes

    Add the remaining 2 tbs of butter, the sautéed garlic (along with any butter), and milk to the potatoes. Use a potato masher or a hand mixer to mash the potatoes until smooth and creamy.

    Add salt and black pepper to taste. If desired, stir in chopped chives for added flavor and garnish. Serve warm.
