    Remove the filet mignon from the refrigerator and let it sit at room temperature for 30 minutes before cooking. This will help it cook evenly.

    Pat the steak dry with paper towels. Generously season both sides with kosher salt and black pepper, pressing the seasoning into the meat.

    In a cast-iron skillet or heavy frying pan, heat the olive oil over medium-high heat until it shimmers but does not smoke.
