Prepare the Steaks
Tenderize the beef cube steaks by gently pounding them with a meat mallet. Season with salt and black pepper on both sides.

Breading Setup
In one bowl, place the buttermilk. In a second bowl, mix the all-purpose flour with salt and black pepper.

Coat the Steaks
Dip each steak first in the buttermilk, allowing excess to drip off, then coat in the flour mixture, pressing to adhere.

Heat vegetable oil in a large skillet over medium-high heat. Fry the steaks for 3-4 minutes on each side or until golden brown. Drain on paper towels.

Cook the Sausage
In a skillet, cook the breakfast sausage over medium heat until browned and crumbled.

Sprinkle the all-purpose flour over the cooked sausage and stir to coat. Cook for 1-2 minutes.

Gradually whisk in the milk, stirring constantly until the gravy thickens. Season with salt and black pepper.
