    Prepare the Brisket

    Preheat your oven to 300°F (150°C). Trim excess fat from the brisket, leaving about 1/4 inch of fat for flavor. Season both sides of the brisket generously with salt and pepper.

    Sear the Brisket

    In a large skillet over medium-high heat, add a tablespoon of oil. Once hot, place the brisket in the skillet and sear for about 4-5 minutes on each side until a nice brown crust forms.

    Roast the Brisket

    Transfer the seared brisket to a roasting pan. Cover it tightly with aluminum foil and place it in the preheated oven. Roast for approximately 3-4 hours or until the internal temperature reaches 195°F (90°C) for tender results.

    Prepare the Sausages

    While the brisket is cooking, preheat a grill or grill pan over medium heat. Place the jalapeño & cheddar smoked sausages on the grill and cook for about 6-8 minutes, turning occasionally until evenly browned and heated through.

    Rest and Slice the Brisket

    Once the brisket is done, remove it from the oven and let it rest for at least 20 minutes before slicing. This helps the juices redistribute for a more flavorful bite.

    Serve

    Slice the brisket against the grain and serve alongside the grilled jalapeño & cheddar sausages. Enjoy your delicious brisket and sausage meal!
