Preparation of Ribs

    Prepare the Ribs

    Begin by removing the membrane from the back of the pork ribs for better flavor absorption. Pat the ribs dry with paper towels.

    Season the Ribs

    In a small bowl, mix together salt, black pepper, paprika, garlic powder, onion powder, brown sugar, smoked paprika, and cayenne pepper. Rub this spice mixture all over the ribs, ensuring they are well coated.

    Apply Olive Oil

    Drizzle olive oil over the seasoned ribs and rub it in to help the spices adhere better.

Cooking the Ribs

    Prepare the Smoker

    Preheat your smoker to 225°F (107°C). Use a mild wood like apple or cherry for a sweeter flavor.

    Smoke the Ribs

    Place the ribs in the smoker bone side down. Smoke for approximately 5 hours, maintaining a steady temperature.

    Wrap the Ribs

    After 5 hours of smoking, wrap the ribs tightly in aluminum foil and return them to the smoker for an additional 2 hours.

    Finish Cooking

    Remove the foil after 2 hours and allow the ribs to smoke for another hour. This will help create a nice crust.

Preparing the BBQ Sauce

    In a medium saucepan, combine ketchup, apple cider vinegar, honey, Worcestershire sauce, garlic powder, onion powder, salt, and black pepper. Stir well.

    Bring the mixture to a gentle simmer over medium heat. Let it cook for about 15-20 minutes, stirring occasionally, until it thickens slightly.

    Brush the BBQ sauce generously over the ribs before removing them from the smoker.
