Bring a large pot of salted water to a boil. Add the fettuccine pasta and cook according to package instructions until al dente, usually about 8 to 10 minutes. Once cooked, drain and set aside, reserving 1/2 cup of the pasta water.

Sauté the Vegetables
In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 30 seconds until fragrant. Add the broccoli florets, sliced bell pepper, julienned carrot, and sliced zucchini. Sauté the vegetables for about 5-7 minutes, or until they are tender but still crisp.

Make the Alfredo Sauce
Pour the heavy cream into the skillet with the sautéed vegetables and bring to a gentle simmer. Stir in the grated Parmesan cheese, salt, and black pepper. Cook for an additional 3-5 minutes until the sauce thickens slightly, stirring frequently.

Combine Pasta and Sauce
Add the cooked fettuccine to the skillet, tossing to coat the pasta with the creamy sauce. If the sauce is too thick, add a little of the reserved pasta water to reach desired consistency.

Remove from heat and sprinkle chopped fresh parsley over the top. Serve immediately, garnished with additional Parmesan cheese if desired.
