Marinated Chicken

Tuscan Lemon Vinaigrette

Method

Marinating the Chicken

  1. 1

    Prepare the Marinade

In a mixing bowl, combine olive oil, lemon juice, minced garlic, dried oregano, salt, and black pepper.

  2. 2

    Marinate the Chicken

Place the chicken breasts in the marinade, ensuring they are well coated. Cover and let marinate for at least 30 minutes in the refrigerator.

Cooking the Chicken

  1. 3

    Cook the Chicken

Preheat a grill or skillet over medium heat. Remove the chicken from the marinade and grill for 6-7 minutes on each side or until the internal temperature reaches 165°F (74°C). Let the chicken rest for 5 minutes before slicing.

Assembling the Salad

  1. 4

    Combine Salad Ingredients

In a large salad bowl, add the cannellini beans, arugula, shaved onion, cherry tomatoes, roasted corn, artichoke hearts, and chopped fresh basil.

  2. 5

    Slice the Chicken

Slice the cooked chicken breasts into strips and add them to the salad mixture.

Making the Vinaigrette

  1. 6

    Prepare the Vinaigrette

In a small bowl, whisk together olive oil, lemon juice, Dijon mustard, honey, salt, and black pepper until well combined.

Serving

  1. 7

    Dress the Salad

Drizzle the vinaigrette over the salad and toss gently to combine all ingredients.

  2. 8

    Serve

Serve the Tuscan Chicken Salad immediately, garnished with additional fresh basil if desired.
