Grill the Mahi
Place the crusted mahi mahi fillets on the grill. Cook for about 4-5 minutes on each side, or until the fish is opaque and flakes easily with a fork. Remove from the grill and keep warm.
Potato Vegetable Hash

Cook the Potatoes
In a large skillet, heat olive oil over medium heat. Add diced potatoes and cook for about 10 minutes, stirring occasionally until they start to soften.

Add Vegetables
Add the diced onion, red bell pepper, zucchini, and minced garlic to the skillet. Season with salt and black pepper. Continue cooking for another 10-15 minutes, stirring occasionally, until the vegetables are fully tender and lightly browned.
Blackened Shrimp

Season the Shrimp
In a bowl, combine paprika, cayenne pepper, garlic powder, onion powder, and salt. Toss the shrimp in the spice mixture until evenly coated.

Char the Broccolini
Place the broccolini on the grill or under the broiler. Cook for about 5-7 minutes, turning occasionally, until charred and tender.
Lemon Herb Cream Sauce

Make the Sauce
In a small saucepan, combine heavy cream, lemon juice, minced garlic, and chopped parsley. Cook over medium heat, stirring frequently, until it begins to simmer. Season with salt and black pepper to taste.

Serve the Sauce
Once the sauce has thickened slightly, remove from heat and drizzle over the grilled mahi mahi and serve alongside the potato vegetable hash, blackened shrimp, and charred broccolini.
