Method

Preparing the Fries

  1. 1

    Cut and Soak the Potatoes

Peel the russet potatoes and cut them into fries about 1/4 inch thick. Soak the cut fries in cold water for at least 30 minutes to remove excess starch.

  2. 2

    Dry and Fry the Potatoes

After soaking, drain the fries and pat them dry with paper towels. In a large pot or deep fryer, heat vegetable oil to 350°F (175°C). Fry the potatoes in batches for about 5-7 minutes until they are golden brown and crisp. Remove them and drain on paper towels. Sprinkle with salt.

Cooking the Steak

  1. 3

    Season the Steak

Rub the ribeye steaks with olive oil, salt, black pepper, garlic powder, and fresh rosemary on both sides. Let them sit at room temperature for about 15-20 minutes.

  2. 4

    Grill the Steak

Preheat a grill or grill pan over medium-high heat. Once hot, place the steaks on the grill and cook for about 4-5 minutes on each side for medium-rare, or until desired doneness. Remove from the grill and let them rest for 5 minutes before slicing.

Plating

  1. 5

    Serve the Dish

On a plate, arrange the fries and place the sliced steak on top. Garnish with chopped fresh parsley before serving.
