Dough

Baking Soda Bath

Method

Making the Dough

  1. 1

    Activate Yeast

In a small bowl, combine warm water (1.5 cups) and sugar (2 tbs). Sprinkle the active dry yeast (2 tsp) on top and let it sit for about 5-10 minutes, or until it becomes frothy.

  2. 2

    Combine Ingredients

In a large mixing bowl, combine all-purpose flour (4 cups) and salt (1 tsp). Add the frothy yeast mixture and melted unsalted butter (4 tbs) into the flour mixture. Stir until a dough begins to form.

  3. 3

    Knead the Dough

Transfer the dough onto a floured surface and knead for about 8-10 minutes until it is smooth and elastic. Form it into a ball.

  4. 4

    First Rise

Place the dough in a greased bowl, cover it with a damp cloth, and let it rise in a warm place for about 1 hour, or until it has doubled in size.

Shaping and Baking

  1. 5

    Preheat Oven

Preheat your oven to 425°F (220°C). Prepare a baking sheet lined with parchment paper.

  2. 6

    Shape the Rolls

Once the dough has risen, punch it down and divide it into 12 equal pieces. Shape each piece into a smooth ball, then use your fingers to create a small hole in the center of each ball to form the roll shape.

  3. 7

    Prepare Baking Soda Bath

In a large pot, bring the water (10 cups) to a boil and add baking soda (2 tbs). This will create a bath for the pretzel rolls.

  4. 8

    Boil the Rolls

Carefully drop the shaped rolls into the boiling baking soda bath, 2-3 at a time. Boil for about 30 seconds, then remove them with a slotted spoon and place them on the prepared baking sheet.

  5. 9

    Egg Wash and Salt

Brush each roll with the egg wash (beaten egg with a little water) and sprinkle coarse sea salt (2 tbs) on top.

  6. 10

    Bake

Bake the rolls in the preheated oven for 12-15 minutes or until they are golden brown. Remove from the oven and let cool slightly before serving.
