    Sauté the Vegetables

    In a large pot, heat 2 tablespoons of olive oil over medium heat. Add the chopped onion and sauté for about 5 minutes until translucent.

    Add Garlic, Carrots, and Celery

    Stir in the minced garlic, diced carrots, and diced celery. Cook for an additional 5 minutes until the vegetables are softened.

    Combine Remaining Ingredients

    Pour in the vegetable broth and diced tomatoes. Add the bay leaf, salt, black pepper, and dried oregano. Stir well to combine.

    Simmer the Soup

    Bring the mixture to a boil, then reduce the heat to low. Cover and let it simmer for 20-25 minutes until the vegetables are tender.

    Add Spinach

    Remove the bay leaf and stir in the chopped spinach. Cook for an additional 5 minutes until the spinach is wilted.

Crostini Directions

    Prepare the Baguette

    Preheat the oven to 400°F (200°C). Slice the baguette into 1/2 inch thick slices.

    Brush with Olive Oil

    Place the baguette slices on a baking sheet. Brush one side of each slice with olive oil and sprinkle with a pinch of salt.

    Toast the Crostini

    Bake in the preheated oven for about 8-10 minutes, or until the edges are golden brown. Remove from the oven.

    Rub with Garlic

    While the crostini are still warm, rub the halved garlic clove over the toasted side of each slice for added flavor.
