Wash and dry the romaine lettuce thoroughly. Chop into bite-sized pieces and place in a large salad bowl.

Add the croutons and grated pecorino cheese to the bowl with the chopped romaine.
Dressing Preparation

In a medium bowl, mash the garlic cloves and anchovy fillets together using a fork until it forms a paste.

Add the Dijon mustard, Worcestershire sauce, lemon juice, salt, and black pepper to the bowl. Whisk until well combined.

Slowly drizzle in the olive oil while whisking continuously until the dressing is emulsified and creamy.
