For the Shrimp

    Prepare the Shrimp

    In a bowl, toss the shrimp with blackening seasoning, olive oil, lemon juice, salt, and pepper until evenly coated. Set aside to marinate for 15-20 minutes.

    Cook the Shrimp

    Heat a skillet over medium-high heat. Add the marinated shrimp in a single layer and cook for about 2-3 minutes on each side, or until they are opaque and cooked through. Remove from heat and set aside.

    Cook the Grits

    In a medium saucepan, bring 4 cups of water and 1 teaspoon of salt to a boil. Gradually whisk in the grits, stirring constantly to avoid lumps. Reduce heat to low and cover, cooking for about 20-25 minutes, stirring occasionally.

    Add Cheese and Butter

    Once the grits are cooked and have thickened, stir in the shredded white cheddar cheese and butter until well combined. Adjust seasoning with salt, if needed.

For the Bacon Jam

    Cook the Bacon

    In a skillet, cook the chopped bacon over medium heat until crispy. Remove the bacon and drain on paper towels, leaving the drippings in the skillet.

    Make the Jam

    In the same skillet, add the chopped onion and cook in the bacon drippings until caramelized (about 5-7 minutes). Stir in the brown sugar and balsamic vinegar, and cook until the mixture thickens. Add the cooked bacon back to the skillet and season with black pepper. Stir to combine and set aside.
