    Prepare the Shrimp and Bacon

    In a skillet, cook the diced bacon over medium heat until crispy. Remove from heat and drain on paper towels. In the same skillet, sauté the shrimp until pink and cooked through, about 3-4 minutes. Set aside.

    Mix the Fritter Batter

    In a large bowl, combine the all-purpose flour, cornmeal, baking powder, salt, and black pepper. In another bowl, whisk together the beaten egg and milk. Gradually combine the wet and dry ingredients, mixing until just combined.

    Combine Ingredients

    Fold in the cooked bacon, sautéed shrimp, roasted corn, and chopped green onions into the batter until evenly distributed.

    Fry the Fritters

    Heat the vegetable oil in a deep skillet over medium-high heat. Using a spoon or small scoop, drop spoonfuls of the batter into the hot oil. Fry for about 3-4 minutes on each side or until golden brown. Drain on paper towels.

    In a small bowl, mix together the mayonnaise, lemon juice, Old Bay seasoning, and minced garlic until well combined. Adjust seasoning to taste.
