Method

Prepare the Salmon

    Season the Salmon

    Rub the Atlantic salmon fillets with olive oil, salt, black pepper, and lemon juice. Make sure the fillets are evenly coated.

    Grill the Salmon

    Preheat your grill to medium-high heat. Place the seasoned salmon fillets on the grill and cook for about 4-5 minutes per side, or until the salmon flakes easily with a fork. Remove from grill and let rest.

Cook the Bacon

    Fry the Bacon

    In a skillet, cook the applewood smoked bacon over medium heat until crispy, about 5-7 minutes. Transfer to a paper towel-lined plate to drain.

Make the Aioli

    Combine Ingredients

    In a bowl, whisk together the mayonnaise, Dijon mustard, lemon juice, minced garlic, salt, and black pepper until smooth and well combined.

Assemble the Sandwich

    Toast the Brioche

    Toast the brioche slices on the grill or in a toaster until golden brown.

    Layer the Ingredients

    On the bottom slice of toasted brioche, spread a generous amount of lemon Dijon aioli. Layer with arugula, grilled salmon, crispy bacon, and sliced tomato. Top with another slice of brioche.
