Grilled Chicken

    Prepare the Chicken

    In a bowl, mix olive oil, salt, black pepper, and garlic powder. Coat the chicken breasts in the mixture.

    Grill the Chicken

    Preheat the grill to medium-high heat. Grill the chicken breasts for about 6-7 minutes on each side or until fully cooked and internal temperature reaches 165°F (75°C). Remove from the grill and let rest.

Herb Mayo

    Make the Herb Mayo

    In a small bowl, combine mayonnaise, chopped parsley, chopped dill, and lemon juice. Mix well and set aside.

Bacon

    Cook the Bacon

    In a skillet over medium heat, cook bacon strips until crispy. Remove and place on paper towels to drain excess fat.

Potato Strings

    Prepare the Potato Strings

    Rinse the julienned potatoes in cold water and pat dry. This helps to remove excess starch.

    Fry the Potato Strings

    In a deep skillet, heat vegetable oil to 350°F (175°C). Fry the potato strings in batches until golden brown and crispy, about 3-4 minutes. Remove from oil and place on paper towels. Season with salt while hot.

Assembly

    Assemble the Sandwich

    Slice the brioche buns in half. Spread a generous amount of herb mayo on the bottom half. Layer with grilled chicken, crispy bacon, smoked gouda slices, tomato slices, and top with the other half of the bun.

    Top the sandwich with a handful of crispy potato strings before closing it up.
