Dough Preparation

Activate the Yeast
In a small bowl, combine warm water and sugar. Sprinkle the active dry yeast over the water and let it sit for about 5-10 minutes until it becomes frothy.

Mix the Dough
In a large mixing bowl, combine the flour and salt. Make a well in the center and pour in the yeast mixture and melted butter. Mix until a dough forms.

Knead the Dough
Transfer the dough onto a floured surface and knead for about 8-10 minutes until smooth and elastic. If the dough is sticky, sprinkle with a little more flour.

First Rise
Place the kneaded dough in a greased bowl, cover it with a damp cloth, and let it rise in a warm place for about 1 hour or until it has doubled in size.
Shaping and Baking

Shape the Rolls
Once the dough has risen, punch it down and divide it into 12 equal pieces. Flatten each piece and place a cube of smoked gouda in the center, then fold the dough over the cheese and shape it into a ball.

Prepare the Baking Soda Bath
In a large pot, bring 10 cups of water to a boil. Once boiling, add 2 tablespoons of baking soda carefully.

Boil the Rolls
Reduce the heat to medium and gently drop each roll into the boiling soda bath, cooking for about 30 seconds on each side. Remove with a slotted spoon and place on a lined baking sheet.

Bake the Rolls
Preheat your oven to 425°F (220°C). Once all rolls are boiled, bake them in the preheated oven for 15-20 minutes or until golden brown.

Make the Honey Mustard
In a small bowl, whisk together honey and Dijon mustard until well combined. Adjust the ratio to taste if needed.
