Method

Cooking the Pork Ribeye

  1. 1

    Prepare the Ingredients

Take the pork ribeye steaks out of the refrigerator and let them sit at room temperature for about 30 minutes. This ensures even cooking.

  2. 2

    Season the Steaks

Rub the pork ribeye steaks with olive oil, salt, and black pepper on both sides. Make sure they are evenly coated.

  3. 3

    Prepare the Garlic and Rosemary

Mince the garlic cloves and chop the fresh rosemary finely.

  4. 4

    Heat the Pan

Heat a large skillet or grill pan over medium-high heat. Add a tablespoon of olive oil to the pan and let it heat until shimmering.

  5. 5

    Cook the Steaks

Once the pan is hot, add the pork ribeye steaks. Cook for about 4-5 minutes on one side until a golden crust forms. Flip the steaks and add the minced garlic and chopped rosemary to the pan.

  6. 6

    Finish Cooking

Cook the steaks for an additional 4-5 minutes for medium-rare, or longer if desired. Baste the steaks with the pan juices to keep them moist.

  7. 7

    Rest the Steaks

Remove the steaks from the pan and let them rest on a cutting board for about 5 minutes before slicing. This allows the juices to redistribute.

Preparing Optional Sides

  1. 8

    Prepare the Asparagus

Wash the fresh asparagus and trim the woody ends. Toss with olive oil, salt, and pepper.

  2. 9

    Roast the Asparagus

Place the asparagus on a baking sheet and roast in the oven at 200°C (400°F) for about 15-20 minutes until tender.

  3. 10

    Prepare the Baby Potatoes

Wash the baby potatoes and cut them in half. Boil them in salted water for about 10 minutes until fork-tender.

  4. 11

    Sauté the Potatoes

Drain the potatoes and return them to the pot. Add olive oil, salt, and pepper, and sauté over medium heat for about 5 minutes until they are golden.
