Beef Patty

    Prepare the Beef Patty

    In a mixing bowl, combine the ground beef, salt, black pepper, and garlic powder. Mix gently until just combined. Form into two 8oz patties.

    Cook the Beef Patty

    Heat a grill or skillet over medium-high heat. Cook the patties for about 4-5 minutes on each side, or until they reach desired doneness.

Korean Spiced Aioli

    Make the Aioli

    In a small bowl, whisk together the mayonnaise, gochujang, lemon juice, and minced garlic until smooth and well combined.

Kimchi Slaw

    Prepare the Kimchi Slaw

    In a large bowl, combine the chopped kimchi, shredded cabbage, shredded carrot, sesame oil, rice vinegar, and chopped green onions. Toss to combine and set aside.

Korean Glaze

    Prepare the Glaze

    In a small saucepan over low heat, combine the soy sauce and brown sugar. Stir until the sugar is dissolved. Remove from heat and set aside.

Burger Assembly

    Toast the Buns

    While the patties are cooking, lightly toast the brioche buns on the grill or in a toaster.

    Assemble the Burger

    Spread the Korean spiced aioli on the bottom half of each toasted bun. Place the cooked beef patty on top, followed by a slice of tomato, a generous amount of kimchi slaw, and a drizzle of the Korean glaze. Sprinkle sesame seeds on top before placing the other half of the bun on.
