For the grilled salmon

    Prepare the marinade

    In a small bowl, whisk together olive oil, lemon juice, garlic powder, salt, and black pepper.

    Marinate the salmon

    Place the salmon fillets in a dish and pour the marinade over them. Let them marinate for at least 15 minutes.

    Grill the salmon

    Preheat the grill to medium-high heat. Grill the salmon for about 4-5 minutes on each side, or until it flakes easily with a fork. If desired, sprinkle fresh dill before serving.

For the roasted asparagus

    Prepare the asparagus

    Preheat the oven to 400°F (200°C). Wash the asparagus and trim the tough ends.

    Season the asparagus

    Place the asparagus on a baking sheet, drizzle with olive oil, and sprinkle with salt and pepper. Toss to coat evenly.

    Roast the asparagus

    Roast in the preheated oven for 12-15 minutes, or until tender and slightly crispy.

For the loaded cheddar and pancetta cauliflower casserole

    Preheat the oven

    Preheat the oven to 375°F (190°C).

    Cook the pancetta

    In a skillet, cook the diced pancetta over medium heat until crispy. Remove and set aside.

    Steam or boil the cauliflower

    In a large pot, steam or boil the cauliflower florets until tender, about 8-10 minutes. Drain and mash them slightly.

    Make the cheese mixture

    In a large bowl, combine the mashed cauliflower, cooked pancetta, cheddar cheese, cream cheese, heavy cream, garlic powder, onion powder, salt, and pepper. Mix well until creamy.

    Transfer the mixture to a greased baking dish and spread evenly. Top with additional cheddar cheese if desired. Bake for 25-30 minutes, or until bubbly and golden on top.
