Preparing the Marinara Sauce

    Cook the Sauce

    In a medium saucepan, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant, being careful not to burn it.

    Add Tomatoes and Seasoning

    Stir in the canned crushed tomatoes, dried oregano, salt, and black pepper. Bring the sauce to a simmer.

    Simmer

    Reduce the heat to low and let the sauce simmer for about 20 minutes, stirring occasionally. Add the fresh basil just before serving.

Preparing the Calamari

    Clean and Prepare Calamari

    If not already cleaned, rinse the calamari under cold water and remove the skin. Cut the calamari into rings approximately 1/2 inch thick.

    Set Up Breading Station

    In a shallow bowl, combine the all-purpose flour, cornstarch, salt, black pepper, and paprika. In another bowl, beat the eggs. In a third bowl, place the breadcrumbs.

    Bread the Calamari

    Dip each calamari ring first into the flour mixture, then into the egg, and finally coat with breadcrumbs, pressing gently to adhere.

    Heat the Oil

    In a large deep skillet or pot, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

    Fry the Calamari

    Working in batches, carefully add the breaded calamari rings to the hot oil. Fry for about 2-3 minutes or until golden brown and crispy. Remove with a slotted spoon and drain on paper towels.
