Prepare the Crab Mixture
In a large mixing bowl, combine blue crab meat, mayonnaise, Dijon mustard, Old Bay seasoning, breadcrumbs, egg, salt, and black pepper. Mix gently to combine without breaking up the crab meat too much.

Form the Cakes
Using your hands, form the crab mixture into patties, about 3 inches in diameter. Place them on a baking sheet lined with parchment paper.

Lemon Old Bay Aioli

Make the Aioli
In a small bowl, whisk together mayonnaise, lemon juice, Old Bay seasoning, and minced garlic until well combined. Set aside.
Chive Hollandaise

Prepare the Hollandaise Sauce
In a heatproof bowl, whisk together egg yolks and lemon juice. Place the bowl over a pot of simmering water (double boiler) and whisk continuously until the mixture thickens.
