Crust Preparation

Preheat Oven
Preheat your oven to 325°F (160°C).

Make the Crust
In a mixing bowl, combine the graham cracker crumbs, granulated sugar, and melted butter. Mix until the crumbs are evenly coated.

Press the Crust
Press the mixture firmly into the bottom of a 9-inch springform pan to create an even layer. Bake in the preheated oven for 10 minutes. Remove from oven and let cool.

Beat Cream Cheese
In a large mixing bowl, beat the softened cream cheese with an electric mixer until smooth and creamy.

Add Sugar and Vanilla
Gradually add in the granulated sugar and vanilla extract. Beat until well combined.

Mix in Sour Cream and Eggs
Add the sour cream and mix until smooth. Add the eggs one at a time, mixing well after each addition.

Add Flour
Add the all-purpose flour and beat until just combined. Do not overmix.

Pour Filling into Crust
Pour the cheesecake filling over the cooled crust, smoothing the top with a spatula.

Bake Cheesecake
Bake in the preheated oven for 55-60 minutes, or until the center is set but still jiggles slightly.

Cool the Cheesecake
Turn off the oven, crack the oven door open, and let the cheesecake cool in the oven for 1 hour. Then remove from the oven and chill in the refrigerator for at least 4 hours, preferably overnight.

Prepare Berries
Rinse the fresh mixed berries under cold water and pat them dry.

Dust with Powdered Sugar
In a small bowl, toss the berries with powdered sugar to lightly coat them.

Once the cheesecake is chilled, top with the sugared berries before slicing and serving.
