    Prepare the Cauliflower

    Preheat your oven to 375°F (190°C). Cut the cauliflower into small florets and steam them until just tender, about 5-7 minutes. Drain and set aside.

    Cook the Pancetta

    In a large skillet, heat the olive oil over medium heat. Add the diced pancetta and cook until it becomes crispy, about 5-6 minutes. Remove the pancetta from the skillet and set aside, leaving the rendered fat in the pan.

    Sauté the Onion and Garlic

    In the same skillet, add the chopped onion and cook until translucent, about 3-4 minutes. Add minced garlic and sauté for an additional 1-2 minutes until fragrant.

    Combine Ingredients

    In a large mixing bowl, combine the steamed cauliflower, cooked pancetta, sautéed onion and garlic, cream cheese, milk, and half of the mozzarella and Parmesan cheese. Season with salt, black pepper, dried Italian herbs, and red pepper flakes. Mix until well combined.

    Transfer to Baking Dish

    Transfer the mixture to a greased 9x13 inch baking dish. Spread it out evenly.

    Add Cheese Topping

    Sprinkle the remaining mozzarella and Parmesan cheese over the top of the casserole.

    Bake in the preheated oven for 25-30 minutes, or until the cheese is melted and bubbly, and the top is golden brown.
