Method

Prepare Mussels

    Clean the Mussels

    Rinse the fresh mussels under cold water. Use a brush to scrub off any dirt or debris on the shells. Remove the beards by pulling them out firmly.

    Sauté Garlic and Chilis

    In a large pot, melt 2 tablespoons of butter over medium heat. Add minced garlic and Calabrian chilis, cooking for about 1-2 minutes until fragrant.

    Cook Tomatoes

    Add the cherry tomatoes to the pot and cook for another 3-4 minutes until they start to blister and release their juices.

    Add Mussels and Wine

    Pour in the white wine and add the cleaned mussels. Cover the pot and steam for about 5-7 minutes, or until the mussels open up.

    Finish the Sauce

    Remove the pot from heat, add the remaining 2 tablespoons of butter, and sprinkle with fresh parsley. Stir gently to combine.

Prepare Garlic Toast

    Preheat Oven

    Preheat your oven to 400°F (200°C).

    Prepare Baguette

    Slice the baguette in half lengthwise. Drizzle olive oil on the cut side and sprinkle with garlic powder and salt.

    Toast Bread

    Place the baguette halves on a baking sheet, cut side up, and toast in the oven for about 5-7 minutes, or until golden brown.
