Prepare the Cauliflower
Remove the leaves and stem from the cauliflower and cut it into bite-sized florets.

Make the Batter
In a large bowl, combine all-purpose flour, cornstarch, garlic powder, onion powder, paprika, and salt. Gradually add water to the dry ingredients and whisk until smooth.

Heat the Oil
In a deep frying pan, heat vegetable oil over medium-high heat until it reaches 350°F (175°C).

Fry the Cauliflower
Dip each cauliflower floret into the batter, letting the excess drip off, then carefully place them in the hot oil. Fry in batches for about 5-7 minutes or until golden brown and crispy. Remove and drain on paper towels.

Prepare the Buffalo Sauce
In a small saucepan over medium heat, melt the butter. Once melted, add hot sauce, garlic powder, and salt. Stir until combined and heated through.
Combine and Serve

Toss in Sauce
Place the fried cauliflower in a large bowl. Pour the buffalo sauce over the cauliflower and toss until evenly coated.

Serve immediately with celery sticks and your choice of dipping sauce, if desired.
