Preparation of Topping

Chop the Tomatoes
Dice the tomatoes into small pieces and place them in a mixing bowl.

Mince the Garlic
Finely mince the garlic cloves and add them to the bowl with the tomatoes.

Prepare the Basil
Roughly chop the fresh basil leaves and add them to the tomato and garlic mixture.

Season the Mixture
Add salt and black pepper to the mixture, then drizzle in 2 tablespoons of olive oil. Stir gently to combine all ingredients.

Let it Rest
Set the topping mixture aside to allow the flavors to meld while you prepare the bread.
Grilling the Bread

Slice the Baguette
Cut the baguette into 1/2 inch thick slices.

Brush with Olive Oil
Brush both sides of each slice with the remaining tablespoon of olive oil.

Grill the Bread
Preheat a grill or grill pan over medium heat. Place the bread slices on the grill and cook for 2-3 minutes on each side, or until they are golden brown and have grill marks.

Remove from Grill
Once grilled, remove the bread from the grill and let it cool slightly.

Spoon the tomato topping generously onto each slice of the grilled bread.

Serve the bruschetta immediately while the bread is still warm.
