    Clean the Octopus

    Rinse the octopus under cold water, removing any residual sand or debris. Ensure the beak is removed and the insides are cleaned.

    Boil the Octopus

    In a large pot, bring salted water to a boil. Add the octopus and simmer for about 30-40 minutes or until it becomes tender. Once cooked, remove the octopus and let it cool slightly.

Marinade

    Make the Marinade

    In a bowl, combine olive oil, minced garlic, chopped parsley, chopped oregano, lemon juice, lemon zest, salt, and black pepper. Mix well to create a marinade.

    Marinate the Octopus

    Cut the cooked octopus into tentacles and place it in the marinade. Ensure each piece is well-coated. Cover and let it marinate for at least 1 hour in the refrigerator.

Grilling

    Preheat the Grill

    Preheat your grill to medium-high heat. Brush the grill grates with oil to prevent sticking.

    Grill the Octopus

    Remove the octopus from the marinade, allowing the excess to drip off. Place on the grill and cook for about 3-4 minutes on each side until charred and slightly crispy.

    Remove the octopus from the grill, and serve immediately with lemon wedges and fresh herbs for garnish.
