    Preheat the Oven

    Preheat your oven to 450°F (230°C).

    Prepare the Bone Marrow

    Place the bone marrow pieces upright in a roasting pan. Make sure they are well spaced to allow for even cooking.

    Season the Bone Marrow

    Drizzle the olive oil over the marrow bones, then sprinkle with sea salt and freshly ground black pepper.

    Chop the Herbs

    Finely chop the fresh thyme, rosemary, and parsley. Mix them together in a small bowl.

    Add Herbs to Bone Marrow

    Sprinkle the herb mixture evenly over the marrow bones.

Roasting

    Roast the Bone Marrow

    Place the roasting pan in the preheated oven and roast for 15-20 minutes, or until the marrow is bubbly and begins to separate from the bone.

    Check for Doneness

    Keep an eye on the marrow during the last few minutes of roasting to prevent burning. It should be golden brown on top.

Serving

    Serve the Bone Marrow

    Remove the roasting pan from the oven and let it cool slightly. Serve the bone marrow with crusty bread and a sprinkle of additional sea salt, if desired.
