Method

Preparing the Marinara Sauce

    Sauté the Aromatics

    In a medium saucepan, heat the olive oil over medium heat. Add the minced garlic and chopped onion, and sauté until the onion is translucent, about 5 minutes.

    Add Tomatoes and Seasonings

    Stir in the canned crushed tomatoes, dried oregano, salt, and black pepper. Bring to a simmer and cook for about 15 minutes, stirring occasionally.

    Finish the Sauce

    Once the sauce has thickened slightly, stir in the fresh chopped basil. Remove from heat and set aside.

Frying the Calamari

    Prepare the Breading Station

    In three separate shallow dishes, place the flour mixed with salt, black pepper, paprika, and garlic powder, the beaten eggs, and the panko breadcrumbs.

    Bread the Calamari

    Dip each calamari ring into the flour mixture, shaking off excess, then into the beaten eggs, and finally coat with panko breadcrumbs. Place the breaded calamari on a plate.

    Heat the Oil

    In a large skillet or deep fryer, heat the vegetable oil over medium-high heat until it reaches 180°C (350°F).

    Fry the Calamari

    Carefully add the breaded calamari to the hot oil in batches, frying for 2-3 minutes or until golden brown and crispy. Remove with a slotted spoon and drain on paper towels.

    Serve

    Serve the crispy calamari warm with the marinara sauce on the side for dipping.
