Preparation of the Steak

    Season the Filet Mignon

    Take the filet mignon pieces and pat them dry with paper towels. Season both sides generously with salt and black pepper.

    Heat the Pan

    In a large skillet, heat the olive oil over medium-high heat until shimmering but not smoking.

    Sear the Steak

    Place the seasoned filet mignon in the hot skillet. Sear for about 4 minutes without moving them, until a golden-brown crust forms.

    Flip and Add Flavor

    Flip the steaks and add the fresh rosemary and butter to the pan. Cook for another 3-4 minutes for medium-rare, basting the steaks with melted butter.

    Rest the Steaks

    Remove the filet mignon from the pan and let them rest on a cutting board for at least 5 minutes before slicing.

    Prepare Garlic Mashed Potatoes

    Boil peeled and chopped potatoes in salted water until tender. Drain and mash with butter, garlic, and cream until smooth.

    In a separate pan, heat olive oil over medium heat. Add trimmed asparagus and sauté until tender, about 5 minutes.
