Preparation

Prepare the Brisket
If you haven't already, smoke the brisket using your preferred method until it reaches a tender state. Allow it to rest before slicing it into bite-sized pieces.

Prepare the Salsa
In a bowl, combine diced tomatoes, chopped onions, cilantro, lime juice, salt, and pepper to taste to make the house-made salsa. Set aside.

Layer the Nachos
Preheat your oven to 350°F (175°C). On a large baking sheet, spread out the tortilla chips evenly.

Add the Brisket
Evenly distribute the smoked brisket pieces over the tortilla chips.

Add the Cheese
Sprinkle the shredded cheddar and Monterey Jack cheese generously over the brisket.

Add Jalapeños
Scatter the jalapeños over the cheese for added spice.

Bake the Nachos
Place the baking sheet in the preheated oven and bake for 10-15 minutes or until the cheese is melted and bubbly.
