Prepare the Crust
Preheat your oven to 350°F (175°C). In a mixing bowl, combine the graham cracker crumbs and melted unsalted butter. Mix until the crumbs are well-coated. Press this mixture firmly into the bottom of a 9-inch springform pan to form a crust.
Bake the Crust
Bake the crust in the preheated oven for 10 minutes. Remove from the oven and let it cool while you prepare the filling.
Make the Cheesecake Filling
In a large mixing bowl, beat the cream cheese until smooth. Gradually add the granulated sugar and continue to beat until well combined. Add the sour cream and vanilla extract, mixing until smooth. Add the eggs one at a time, mixing gently after each addition until fully incorporated.
Combine and Pour
Pour the cheesecake filling over the cooled crust in the springform pan, smoothing the top with a spatula.
Bake the Cheesecake
Bake the cheesecake in the oven for 55-60 minutes or until the center is set but still slightly jiggly. Turn off the oven and leave the cheesecake inside for 1 hour to cool gradually.
Chill the Cheesecake
After the cheesecake has cooled, remove it from the oven and let it cool to room temperature. Cover and refrigerate for at least 4 hours, preferably overnight.
Serve
Once chilled, remove the cheesecake from the springform pan and top with the prepared strawberries. Slice and enjoy your rich New York cheesecake!
