1. Prepare the Rice Pilaf
In a saucepan, heat 1 tablespoon of olive oil over medium heat. Add finely chopped onion and minced garlic, and sauté until translucent.
2. Cook the Rice
Add rice to the saucepan and stir for 2-3 minutes. Pour in chicken broth, bring to a boil, then cover and reduce heat. Simmer for 15-20 minutes until rice is tender.
3. Prepare the Zucchini
While the rice is cooking, slice the zucchini into half-moons. In a bowl, toss zucchini with remaining olive oil, salt, and pepper.
4. Grill the Zucchini
Heat a grill pan over medium-high heat. Grill zucchini for 3-4 minutes on each side until tender and grill marks appear.
5. Cook the Salmon
Preheat the grill or a grill pan. Brush salmon fillets with hickory bourbon sauce. Grill for about 4-5 minutes per side, basting with additional sauce until cooked through.
6. Serve
On each plate, serve a salmon fillet with a side of grilled zucchini and a scoop of rice pilaf. Garnish with chopped parsley.
