Make the dough
In a large mixing bowl, combine all-purpose flour, caraway seeds, and salt. Mix well.

Add oil
Add the oil to the flour mixture and rub it between your fingers until it resembles coarse crumbs.

Add water
Gradually add water, kneading the mixture to form a smooth and firm dough. Cover it with a damp cloth and let it rest for 30 minutes.

Add spices and veggies
Add grated ginger, chopped green chili, coriander powder, cumin powder, and salt. Stir for a minute, then add the mashed potatoes and green peas. Mix well.

Finish the filling
Add garam masala, chopped cilantro, and lemon juice. Mix thoroughly and let the filling cool.
Assembling and Frying

Roll out the dough
Divide the dough into small balls. Roll each ball into a thin oval shape, about 6 inches long.

Form the samosas
Cut the rolled dough in half to create two semicircles. Take one semicircle, form a cone shape by bringing the straight edges together, and seal the edge with water.

Fill the samosas
Fill the cone with the potato-pea filling and seal the open edge by pressing it firmly with your fingers.

Heat the oil
In a deep frying pan, heat oil until hot (about 350°F or 175°C).

Fry the samosas
Carefully place the samosas in the hot oil and fry until golden brown, about 5-7 minutes. Remove and drain on paper towels.
