Filling Preparation

    Boil Potatoes

    Peel and cut the potatoes into quarters. Boil them in salted water until soft, about 15-20 minutes. Drain and let them cool.

    Mash Potatoes

    Once cooled, mash the boiled potatoes in a large bowl.

    Cook Onions and Peas

    In a pan, heat 2 tablespoons of oil over medium heat. Add cumin seeds and let them splutter. Then, add finely chopped onion and ginger. Sauté until the onions are translucent. Add green peas and cook for 2-3 minutes.

    Combine Filling Ingredients

    Add the mashed potatoes to the pan along with coriander powder, garam masala, turmeric powder, and salt. Mix everything well and cook for another 5 minutes. Remove from heat and let cool.

    Make the Dough

    In a mixing bowl, combine all-purpose flour, salt, and 1 tablespoon of oil. Gradually add water and knead into a firm dough. Cover with a damp cloth and let it rest for 30 minutes.

Assembling and Frying Samosas

    Prepare to Fry

    Heat 3 cups of oil in a deep frying pan over medium heat.

    Roll the Pastry

    Divide the dough into small balls. Roll each ball into a thin oval shape. Cut the oval in half to form two semi-circles.

    Form Samosas

    Take one semi-circle, fold it into a cone shape, and seal the edge with water. Fill the cone with the potato-pea filling and seal the open edge by pinching it together.

    Fry Samosas

    Once the oil is hot, gently slide the samosas into the oil. Fry them in batches until golden brown and crispy, about 5-7 minutes. Remove and drain on paper towels.

    Serve

    Serve the hot samosas with mint chutney or tamarind sauce.
