Mixing the Ingredients
In a large mixing bowl, combine the whole wheat flour and salt. Mix well to ensure the salt is evenly distributed.

Gradually add water to the flour mixture, a little at a time, mixing it with your hand or a spoon until the dough begins to come together.

Kneading the Dough
Once the dough starts forming, knead it for about 8-10 minutes until it becomes smooth and elastic. If using, add the oil during the kneading process for added richness.

Resting the Dough
Cover the dough with a damp cloth or plastic wrap and let it rest for at least 30 minutes. This allows the gluten to relax, making it easier to roll out.

Dividing the Dough
After resting, divide the dough into equal-sized balls, about the size of a golf ball.

Rolling the Roti
On a floured surface, take one dough ball and flatten it slightly. Using a rolling pin, roll it out into a circular shape, about 6-8 inches in diameter and about 1/8 inch thick.

Flipping the Roti
Flip the roti using tongs or a spatula. Cook the other side for about 30 seconds. You can press gently with a clean cloth to help it puff up.

Final Cooking
If desired, flip the roti again and cook directly on an open flame for a few seconds until it puffs up completely. This step adds a smoky flavor.

Remove the roti from the heat and keep it warm in a covered container. Repeat the process with the remaining dough balls. Serve warm with your favorite curry or side dish.
