Cottage Cheese Dumplings

Sweetened Milk

Method

Cottage Cheese Dumplings Preparation

  1. 1

    Prepare the Dough

In a large mixing bowl, combine the cottage cheese, milk powder, all-purpose flour, baking soda, sugar, cardamom powder, and water. Mix well until a smooth dough forms.

  2. 2

    Shape the Dumplings

Divide the dough into small equal portions and roll each portion into smooth balls. Set aside on a floured surface.

Sweetened Milk Preparation

  1. 3

    Prepare the Sweetened Milk

In a large saucepan, heat the whole milk over medium heat. Add the sugar and stir until it dissolves completely.

  2. 4

    Infuse with Cardamom and Saffron

Add the cardamom pods and saffron strands to the milk. Allow it to simmer gently for 10 minutes, stirring occasionally.

Cooking the Dumplings

  1. 5

    Cook the Dumplings

In a separate pot, bring water to a boil. Carefully drop the cottage cheese dumplings into the boiling water. Cook for about 10 minutes, or until they double in size and float.

  2. 6

    Transfer Dumplings to Milk

Using a slotted spoon, transfer the cooked dumplings to the simmering sweetened milk. Let them soak for at least 30 minutes to absorb the flavors.

Garnishing and Serving

  1. 7

    Garnish

Once soaked, garnish the ras malai with chopped pistachios and almonds before serving.

  2. 8

    Serve

Serve the ras malai chilled or at room temperature as a delightful dessert.
