Prepare the Dough
In a large mixing bowl, combine the cottage cheese, milk powder, all-purpose flour, baking soda, sugar, cardamom powder, and water. Mix well until a smooth dough forms.

Shape the Dumplings
Divide the dough into small equal portions and roll each portion into smooth balls. Set aside on a floured surface.

Infuse with Cardamom and Saffron
Add the cardamom pods and saffron strands to the milk. Allow it to simmer gently for 10 minutes, stirring occasionally.
Cooking the Dumplings

Cook the Dumplings
In a separate pot, bring water to a boil. Carefully drop the cottage cheese dumplings into the boiling water. Cook for about 10 minutes, or until they double in size and float.

Transfer Dumplings to Milk
Using a slotted spoon, transfer the cooked dumplings to the simmering sweetened milk. Let them soak for at least 30 minutes to absorb the flavors.

Once soaked, garnish the ras malai with chopped pistachios and almonds before serving.
