Dough Preparation

Mix the Ingredients
In a mixing bowl, combine the whole wheat flour and salt. Mix well to ensure an even distribution of salt.

Knead the Dough
Add the oil to the flour mixture and gradually add water while kneading the dough. Knead until you have a smooth and pliable dough, about 5-7 minutes.

Rest the Dough
Cover the dough with a damp cloth and let it rest for at least 30 minutes. This allows the gluten to relax and makes rolling easier.
Frying the Puris

Heat the Oil
In a deep frying pan or kadhai, heat oil over medium heat. The oil should be hot enough that a small piece of dough dropped in it sizzles and rises to the surface.

Roll the Puris
After resting, divide the dough into small balls (about the size of a golf ball). Roll each ball into a small, round disc about 3 inches in diameter, ensuring it is not too thick.

Fry the Puris
Gently slide one puri into the hot oil. Fry until it puffs up and is golden brown on both sides, about 30 seconds. Use a slotted spoon to flip it if necessary.

Drain and Serve
Remove the puri from the oil and drain on paper towels to remove excess oil. Serve hot with your favorite curries or chutneys.
