Method

Preparation of Rice

    Rinse and Soak Rice

    Rinse the basmati rice under cold water until the water runs clear. Soak it in water for 30 minutes, then drain.

    Cook Rice

    In a large pot, bring 4 cups of water to a boil. Add the soaked basmati rice and salt. Cook for about 10-12 minutes or until the rice is 70% cooked. Drain and set aside.

Cooking the Vegetables/Meat

    Sauté Onions

    In a large, heavy-bottomed pot, heat 2 tablespoons of oil over medium heat. Add the sliced onions and sauté until they are golden brown.

    Add Chicken and Spices

    Add the ginger-garlic paste, chicken pieces, and sauté for 5-7 minutes until the chicken is browned. Add the biryani masala, green chilies, cinnamon stick, cloves, cardamom pods, and bay leaves, stirring well.

    Mix in Yogurt and Veggies

    Add the yogurt and mixed vegetables to the pot. Stir to combine and cook for another 5 minutes.

Layering and Final Cooking

    Layer Rice

    Spread the partially cooked rice over the chicken-veggie mixture evenly. Drizzle lemon juice over the top and garnish with chopped coriander leaves.

    Cook on Dum

    Cover the pot with a lid and reduce the heat to low. Cook for 25-30 minutes, allowing the flavors to meld and the rice to finish cooking.

    Serve

    Once done, fluff the biryani gently with a fork, serve hot with raita or salad.
