Preparation
- 1
Rinse the Rice
Rinse 1.5 cups of basmati rice under cold water until the water runs clear. This removes excess starch and helps to keep the rice fluffy.
- 2
Chop the Onion
Finely chop 1 medium onion and set aside.
- 3
Prepare the Peas
If using fresh peas, shell them from their pods. If using frozen peas, no further preparation is necessary.
- 4
Chop the Herbs
Finely chop 0.5 cups of fresh cilantro leaves and set aside for garnishing.
Cooking
- 5
Heat the Oil
In a large pot, heat 2 tablespoons of vegetable oil or ghee over medium heat until hot.
- 6
- 7
Add Spices
Stir in 1 teaspoon of cumin seeds, 2 cardamom pods, 2 cloves, and 1 bay leaf. Cook for 1-2 minutes until fragrant.
- 8
- 9
Add Water and Season
Pour in 3 cups of water and add 1 teaspoon of salt and 1 teaspoon of black pepper powder. Stir to combine.
- 10
Cook the Rice
Bring the mixture to a boil, then reduce the heat to low. Cover the pot with a lid and let it simmer for about 15-20 minutes, or until the rice is cooked and the water has evaporated.
