Method

Preparation

  1. 1

    Rinse the Rice

Rinse 1.5 cups of basmati rice under cold water until the water runs clear. This removes excess starch and helps to keep the rice fluffy.

  2. 2

    Chop the Onion

Finely chop 1 medium onion and set aside.

  3. 3

    Prepare the Peas

If using fresh peas, shell them from their pods. If using frozen peas, no further preparation is necessary.

  4. 4

    Chop the Herbs

Finely chop 0.5 cups of fresh cilantro leaves and set aside for garnishing.

Cooking

  1. 5

    Heat the Oil

In a large pot, heat 2 tablespoons of vegetable oil or ghee over medium heat until hot.

  2. 6

    Sauté the Onions

Add the chopped onion to the pot and sauté until translucent, about 5-7 minutes.

  3. 7

    Add Spices

Stir in 1 teaspoon of cumin seeds, 2 cardamom pods, 2 cloves, and 1 bay leaf. Cook for 1-2 minutes until fragrant.

  4. 8

    Add Rice and Peas

Add the rinsed rice and 1 cup of fresh peas to the pot. Stir gently to combine with the spices and onions.

  5. 9

    Add Water and Season

Pour in 3 cups of water and add 1 teaspoon of salt and 1 teaspoon of black pepper powder. Stir to combine.

  6. 10

    Cook the Rice

Bring the mixture to a boil, then reduce the heat to low. Cover the pot with a lid and let it simmer for about 15-20 minutes, or until the rice is cooked and the water has evaporated.

  7. 11

    Fluff and Garnish

Once cooked, remove from heat and let it sit covered for another 5 minutes. Fluff the rice with a fork and garnish with chopped cilantro.
