Preparation of Dough

Soak Lentils
Rinse the urad dal in water and soak it in enough water for at least 4-6 hours or overnight.

Make the Batter
Drain the soaked dal and blend it with 1 cup of water to make a smooth batter. The consistency should be thick but pourable.

Mix Ingredients
In a large bowl, combine the blended urad dal batter with rice flour, salt, and cumin seeds. Mix well until you have a smooth dough.

Rest the Dough
Cover the dough with a damp cloth and let it rest for about 30 minutes.
Shaping and Frying

Prepare to Fry
Heat vegetable oil in a deep frying pan over medium heat.

Form Wafers
Take small portions of the dough and roll them into thin circles (about 6 inches in diameter) on a lightly floured surface.

Fry the Papadums
Once the oil is hot, carefully slide in one papadum at a time. Fry until they puff up and turn golden brown, about 30 seconds on each side.

Drain Excess Oil
Remove the fried papadums with a slotted spoon and place them on paper towels to absorb excess oil.

Serve
Serve the crispy papadums hot as an appetizer or snack. They can also be paired with chutneys or curries.
